Who is Killik?: Killik Handcrafted Rum is the second dedicated rum distillery in Victoria and Australia’s first producer of HOGO Rum. Our cellar door is nestled at the base of the hills of the Dandenong ranges in Belgrave alongside our gin distillery, GinFinity.

We specialise in producing a funky Jamaican-style rum known for its fruity and complex flavour profile, making it perfect for creating unique and interesting cocktails. Your role

At Killik, we believe that the heart of a great bar lies in its ability to create memorable experiences through unique drinks. Our rums are one of the most unique in Australia, and we need someone who can creatively explore their potential. As Bar Manager, you'll play a vital role in experimenting with and designing cocktails that truly highlight what makes our spirits stand out.

You will have full creative control to innovate with our products and curate a cocktail menu that resonates with our customers. Working closely with a small, passionate team, your focus will be on delivering drinks that reflect the essence of what we do. Your contribution will be central to shaping the bar’s identity and how our rum is experienced.

Key Responsibilities: Oversee and manage the day-to-day operations of the bar, including opening and closing procedures, preparing and batching cocktails, and supervising the bar team.

Be an inspiring leader, developing and training the bar team to ensure every guest enjoys an exceptional experience. Have a strong desire to learn and continually improve your skills and techniques to stay ahead in the industry. Develop and curate creative cocktail menus, including the introduction of exciting weekly specials. Manage inventory and budgeting while collaborating with management to maintain efficient operations.

Requirements: Cocktail bartender experience is essential, and supervisory or bar management experience is highly desired. Must be available for full-time work, from Wednesday to Sunday (10:30pm closes). Possess strong leadership, team-building and communication skills.
