Storeroom is neat and tidy, stock levels monitored, nothing stored on the floor, all shelves free of rust/ dust, clean behind fridges/freezers, lights working and covers clean, walls and doors clean.

Cold-room clean and neatly packed. Deep freezers defrosted regularly, correctly packed and neat. Oil of chip fryers is within shelf life and correctly filtered, correct temperature followed and clean unit. Wok is clean and water available for cooking. Ensure there is clean and sanitized cutting boards. Ensure packaging levels are adequate and neatly packed for use. All containers are clean and ready for use, all food prepped is covered. Temperatures of all appliances are correct. Microwaves are clean and working. Underbar fridge is clean and organized, packed correctly. Scale is clean and charged. Utensils are clean and ready for use in the kitchen and restaurant.

Canopy/ extractor is cleaned daily. All vegetables are cut to specification. All food products are portioned according to standards. Stock levels as per requirement.
