Sous Chef
Sous Chef required by a leading City Centre 4 star hotel for a very busy kitchen
Salary guide 35k
Ideal candidate will have worked in a 4 /5 * property and produced high volume quality food
Main Duties:
1, To assist the head chef in the setting up of agreed standards for the hotel kitchens
2, Maintain and monitor the H.A.C.C.P system set in place and train and mentor kitchen colleagues
3, Train the staff in the standards set and record all training given
4, To take control of the kitchen and the associated areas and keep the high standards expected
5, Introduce TDS sheets for all dishes on menus and train colleagues to produce them
6, Monitor stock rotation, checks deliveries and returns
7, Ensure staff meals are to a high standard
8, Manage kitchen staff in a professional manner and record and report any issue
9, Be involved in the setting up of menus for restaurant and other area
10, Costing of dishes and menus as requested
11, Ensure the best quality dishes are produced in the hotel kitchen
12, To take complete control of the kitchen on head chefs absence, days off and holidays
13, Ensure that the hotel waste management system is followed
14, Show leadership skills and development of colleagues
